Lilly is 20 months today, which feels so old all of a sudden (and I guess I’ll have to start counting her age in years, not months, soon?). We’re heading to Great Barrington and North Adams next weekend (on the agenda: MASS MoCA, Tourists, and Rubiner’s) and we took almost the exact same trip when she was 6 months old—it’s crazy what a difference a year makes. In other news, Rob is heading to LA for a work trip so I’ll be solo for three days. Whenever one of us is away, the thing that feels the hardest is being the only cook, dishwasher, trash putter-outer etc., which is why we did a lot of prep this weekend.
Here’s what we cooked and more:
Full fridge, can’t lose: Having a fridge full of tasty food makes solo parenting much, much easier. We made a giant, supergreen frittata (I like this Bon Appetit primer) with my favorite combo of kale, onions, and feta, plus a a double batch of banana-egg pancakes. On the latter, I’m happy to say I’ve finally perfected my ratio: 1 banana, 1 egg, 2 tbsp buckwheat or other flour, 1/8 tsp baking soda and powder, salt.
For lunches and dinners, I have a Hungryroot delivery coming, including my new favorite Indian Red Lentil Dahl, which is great over rice, and Whole Wheat Sprouted Flatbread, which Lilly loves topped with cheese and greens.
Healthyish cake: If you show me a glorious picture of a veggie-full dessert topped with golden sparkle dust, well I’m going to bite. I’m happy to confirm that Healthyish’s Heartbeet Chocolate Cake (gluten-free, dairy-free, and chock-full of beet puree) is crazy good. Highly recommend, but be forewarned that you will dirty three bowls and a blender in pursuit of deliciousness.
Playroom upgrade: Now that Lilly and her BFF Caleb are getting into art, we figured they could use a little workstation. I had my eye on this Crate and Barrel table-and-chair set but it was backordered so I went with this simple, affordable Montessori-style one. The kids are *very* excited about their tiny setup.
Denim refresh: I’ve tried many, many jeans and haven’t found any as flattering or comfortable as Ayr. I love the Hi-Rise Skinny (especially nice post-baby 🙂 and recently splurged on the The Bomb Pop, which have a cropped, kicky hem and are going to be perfect with sneaks and slides come spring. (P.S. Because of Rent the Runway Unlimited, I barely shop but great jeans are essential.)
Winter skin fixes: This time of year, I’ll take all the hydration I can get. I’ve been doubling up on oils with One Love Organics’ super gentle Vitamin B Enzyme Cleansing Oil and Naturopathica’s silky Carrot Seed Oil. My friend Nanditaalso introduced me to Westman Atelier’s clean-ingredient Vital Skin Foundation Stick, and it’s incredible—totally weightless and has a gorgeous, glowy finish.
